THE GONGO OF UNCLE TANCREDI MERLOT DOC
Geographical position
The lands where the vineyards are set, rich of chalk, are spread in the immediate hinterland of Garda upon the near Morenic hills which affect to transmit their appreciate characteristics.

Origins of the wine grapes
Wine obtained by Merlot Wine grapes cultivated in Riviera del Garda with a production of wine grapes of 5000/6000 kg per Hectare.
Production of wine grapes
A Guyot (system of the upbringing of the yards wide-spread everywhere, with some differences in the binding more or less incline, and in the length of the pruning. This system has the advantage of a good possibility of mechanisation of the green pruning and the harvest, excellent exposure of the leafs, adequate lease of the plant, good quality of the production, vegetative stimulation for the weaker vineyards and facility to keep expert labour. Otherwise it is necessary to renovate every year the pruning, with following binding, the grapes are very exposed to the sun, therefore they can show problems with the check of the maturity of the precocious vine grapes or because of the risks of illnesses and burnings; in fresh areas with an excess of vegetative stimulation, witch obliged to often green pruning: it’s more exposed to damages caused by the wind and has a low connection between old and young wood, therefore less reserve organs, for sugar in particular.
Harvest
Third September week. Handmade by putting the grapes into baskets of 18 kilos
Wine-making
In steel baskets in open areas with soaking under controlled temperature.
Soaking duration 18-20 days.
Refining
Would be refined at least for……….. Month in steel baskets and at least for……..month in the bottle.
Description
Intensive ruby-red wine, with a characteristic perfume. Harmonic taste with a soft pleasant bitter ground, pleasant, good consistence and chromatic. The refining in steel baskets confers to this noble wine grenade shades, and a particular rich and persistent taste which makes him unmistakable.
Accompanies in a refining way plates rich on tastes like roasts of red meet, ham and different sorts of cheese. It should be served by environment temperature (16-18° C) in large cups.

Description
Wine obtained from the vinyl Cabernet Sauvignon. Intensive ruby-red wine, it has an unmistakeable bouquet characterised by light herbaceous notes with delicate inkling of drugs. For the taste it results intensive rightly tannic and elegant.

WHITE WINES:
SASSAIA CHARDONNAY
The Chardonnay is a vinyl original from the French town Chardonnay, in Bourgogne.
It is a vigorous and very efficient vinyl, instead sensible to the spring frosts; the harvest must be very precise because the vinyl tends to loose its acid component very quickly after the point of maturity.

Description
This wine was created with the intention to express high sensations contained with aromatic and structural intensity.
Yellow straw-coloured, where it distinguish itself by its fresh and elegant characteristics. It has a delicate fruity perfume with strong sensations of apple.
Because of it’s interesting aromatic persistence and its finesse its ideal accompanied to aperitifs, thin starters, See fish, pasta and soups
